Why it’s great: Lion’s Mane’s with its sweet, creamy, buttery flavor and its meaty, stringy texture makes it the perfect crab substitute.
Ingredients:
- 1 large Lion’s Mane mushroom (shredded or pulled apart by hand)
- 1/4 cup breadcrumbs or panko
- 1 egg (or 1–2 tbsp vegan mayo)
- 1 tbsp Dijon mustard
- 1 tbsp Old Bay seasoning
- 1 tsp lemon juice
- ½ cup diced red, yellow, or orange (or a mix) of sweet peppers
- ½ cup diced sweet onion
Instructions:
- The first and most important step is to sauté shredded Lion’s Mane in a little oil/butter until golden and moisture is gone, then place over a clean paper towel to absorb any lingering moisture.
- Mix with remaining ingredients.
- Form into patties, let chill in the refrigerator for 30 mins to an hour and pan-fry until crispy and golden brown, or bake them at 425° on a parchment paper lined sheet for 15 to 20 minutes.
- Serve with lemon wedges and dipping sauce.
