If pasta isn’t part of your diet, this blend is also delicious over Polenta, Wild Rice, or even a Crostini.

Perfect with: A blend of Oyster Mushrooms, or any of your favorite gourmet mushroom blends

Ingredients:

  • 1 lb cooked pasta (linguine or fettuccine)
  • 2 cups mixed mushrooms, sliced
  • 1 tbsp olive oil + 1 tbsp butter
  • 2–3 cloves garlic, minced
  • 1/2 cup heavy cream or coconut cream
  • 1/4 cup grated Parmesan (optional) or nutritional yeast
  • Fresh thyme, salt & pepper to taste

Instructions:

  1. Sauté mushrooms dry for 5 minutes, then add in oil + butter and seasonings for your dish, and sauté another 2 minutes. Remove mushrooms and set aside while you make your sauce.
  2. Add garlic, 1 tbsp of butter, & stir for 1 min.
  3. Stir in cream and simmer until slightly thickened.
  4. Toss with cooked pasta, top with Parmesan and herbs.
